Cream for Wafer Biscuit - Recipe

1 Sugar (Ground/Powdered) 15.00 Kgs
2 Vegetable Fat 7.50 Kgs
3 Salt (Optional) 5 Gms
4 Soya bean Oil 200 Gms
5 Colour Q.S
6 Essence As desired
7 Wafer Sheet (Ground) Up to 10% by wt.
Procedure:
  • Beat the Vegetable Fat in a planetary mixer for 5 minutes till semi-soft.
  • Add other ingredients slowly.
  • Mix at high speed for about 15 minutes till the cream is light and fluffy.
  • Climatic changes may require fat proportion to be changed.
